Epic Twists

Ingredients

  • portobello mushroom slices
  • oil
  • salt
  • fresh tomato
  • garlic

Preparation

  1. Instead of bacon, I roasted portobello mushroom slices (toss with oil, salt, and bake at 425 for 50-ish minutes) - they seriously taste like bacon

  2. Fresh tomato slices aren’t my thing unless it’s summer, so I roasted cherry tomatoes with roughly chopped garlic/oil/salt - that was a very good idea

  3. I tossed chopped romaine with smashed avocado & dijon mustard to wilt the lettuce a bit, and also spread mustard & avo on the bread (moisture is key!)

  4. While i love these thin bread slices for grilled cheeses and pb/honey toasts, next time I’ll use a heartier bread to keep everything together, live & learn
