Lemon & Mint Sea Bass

Ingredients

  • 6 tbsp olive oil
  • 6 garlic cloves, crushed
  • juice and zest of 1 lemon + extra lemon for garnishing
  • 1.5 tsp dried mint or mint sauce
  • 1 tsp coarse black pepper
  • 1 tsp salt (adjust to taste)_

Preparation

  1. Remove the scales/fins from the sea bass and clean well

  2. Use a sharp knife to score the flesh either side of each fish

  3. In a bowl mix all of the above ingredients to create a paste, alternatively blend the ingredients in a blender to create a smoother paste which you can brush on

  4. Apply/brush the paste onto the fish, taking care to ensure you apply paste to the scored flesh and inside

  5. Slice up some lemon and add to the insides of each fish

  6. Grill under the grill/broiler until the fish is cooked all the way through and skin is crispy (i cooked my fish for about 20 mins on my circo roast function)

  7. Serve as a starter to a main meal or enjoy with cous cous or a hearty salad as a main meal
