Matar Paneer

Ingredients

  • 275g paneer
  • 2 tbsp veg oil
  • 1 medium onion finely chopped
  • 1 tsp garlic finely chopped
  • 1 tsp ginger finely chopped
  • 1 tsp dried fenugreek (methi) leaves
  • 1 tsp kashmiri chilli powder
  • 1 tsp cayenne pepper
  • 1/2 tsp turmeric
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 1 tbsp ground coriander
  • 1/2 tsp ground black pepper
  • 3 medium tomatoes chopped
  • 150g greek yoghurt
  • 1 tsp light brown sugar
  • 100ml water
  • 130g frozen peas, thawed and drained

Preparation

  1. Add the oil and onions to a pan on a medium high heat and sauté until turning translucent

  2. Add a pinch of salt, the ginger, garlic and the dried fenugreek leaves and sauté for a few more minutes, then stir in the spices

  3. Stir fry the spices for a couple of minutes then add the chopped tomatoes, sugar and the water and cover and simmer gently for ten minutes

  4. Stir in the yoghurt off the heat and blitz until smooth with a hand blender

  5. Add the paneer and peas and gently combine, spooning the sauce over the paneer so not to break it up

  6. Heat through gently for five or six minutes then season to taste
