Mediterranean Vegetables Roasted in the Oven

Ingredients

  • 1 red onion
  • 1 large courgette
  • 1 large aubergine
  • 2 peppers
  • 1 can of chickpeas
  • 2 tins of tomatoes
  • 1 tbsp tomato paste
  • 1 stock cube
  • any herbs you can get your hands on, i used basil, oregano, parsley and chives.
  • 1tsp chilli flakes
  • 1/2 tsp smoked paprika
  • 1 whole bulb of garlic

Preparation

  1. Pre heat your oven at 180•

  2. Chop all the veg into roughly the same size

  3. Slice the top end of the garlic off, leaving it all still attached by the root

  4. Put into a large deep baking tray and cover generously with olive oil, salt & pepper

  5. Roast for 15 mins until just starting to char at the edges

  6. Remove from the oven and make a whole, add a touch of oil and put the tomato paste, chilli and paprika in that area, let the heat from the tray release the glorious aromas

  7. Throw in the chickpeas (brine included) and the tomatoes

  8. Fill up one of the cans with water and pour that in too along with the stock cube

  9. Add in the herbs (roughly chopped)

  10. Give it one big stir and pop back in the oven for another 20-25 minutes

  11. Take out and serve hot !!
