Mushroom Zucchini Toast with Fried Sage

Ingredients

  • baby Bella mushrooms
  • 2 sliced garlic cloves and 1/2 small thinly sliced zucchini
  • 1/2 tsp liquid smoke
  • ground pepper and sea salt to taste
  • olive oil
  • 1/2 handful of fresh sage
  • zucchini

Preparation

  1. For 4 small or 2 large toasts, simply sauté 8oz of sliced baby Bella mushrooms (brush the mushrooms if need be, but don’t wash them with water), 2 sliced garlic cloves and 1/2 small thinly sliced zucchini in 1 tbsp olive oil over medium heat for 10 minutes

  2. Optional: add 1/2 tsp liquid smoke if you want to add a little smoky flavor)

  3. Add ground pepper and sea salt to taste while cooking and add a little more olive oil if need be

  4. For the fried sage, add olive oil to a separate small pan or pot (just enough to fully cover the sage), heat over medium to high heat and once hot, add 1/2 handful of fresh sage to the oil and fry for just about 10 seconds or until crispy but still green

  5. Remove from the oil using kitchen tongs and remove any excess oil with a kitchen towel

  6. Serve the mushrooms and zucchini on top of sliced bread (optionally toast the bread before) and top with the fried sage

  7. Enjoy
