Oatmeal Bake

Ingredients

  • 2 cups old-fashioned oats
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 over ripe bananas
  • 1 1/2 cups almond milk
  • 1/4 cup creamy peanut butter (or nut / seed butter of choice)
  • 2 tbsp maple syrup
  • 1 tbsp ground flaxseed
  • 1 tsp vanilla extract

Preparation

  1. Preheat the oven to 375° f

  2. In an 8x11 inch baking dish, combine the oats, cinnamon, baking powder and salt

  3. In a large mixing bowl, mash the bananas, then add the almond milk, nut butter, maple syrup, flaxseed and vanilla extract

  4. Allow the mixture to stand for 5 minutes for the flaxseed to set

  5. Pour over the wet ingredients over the oat mixture and stir to combine

  6. Bake uncovered in the preheated oven until the top of the oatmeal is golden and the mixture is set, about 30-35 minutes

  7. Remove and allow it to cool for 5 minutes

  8. Serve with drizzled nut butter and banana slices, if desired
