Quinoa & Crunchy Tofu
Ingredients
- 1/2 tofu block
- 1 cup quinoa
- tomatoes/any veggie (optional)
- tofu’s marinade:
- 1 tbsp coconut oil (any other oil is fine too)
- 1 tbsp soy sauce
- 1 tbsp cornstarch powder
Preparation
Cut the tofu into small dice and, in a bowl, mix it in with the 3 ingredients for the marinade. The cornstarch gives the tofu the perfect crunch once baked. Transfer the tofu to a baking tray and bake for 30’ at 180C. While the tofu bakes, cook the quinoa (1?:3?) on medium heat
The little quinoa mountain gives it an elegant touch but it’s actually fools-proof ✨ grab a tiny bowl and fill it to the top with quinoa. Flatten it with a spoon. Grab the plate where you’ll eat from, and cover the bowl. Flip it upside down (don’t let go ?) and there you have it, done
