Simple and Delicious Chinese BBQ Rice
Ingredients
Chili sauce
- 4-5 red jalapenos
- 3 tablespoons rice vinegar
- 1 tablespoon maple syrup
- 2 cloves garlic
- 1 slice ginger
- dash of salt
Flavored rice
- 1 cup Jasmine rice
- 2 cloves minced garlic
- 1 tablespoon grated ginger
- 3 teaspoons sesame oil
- 1/4 teaspoon salt
- 1 1/4 cups water
Bbq tofu
- 1 pack firm tofu (16oz)
- 4 tablespoons hoisin sauce
- 2 tablespoons garlic chili sauce
- 1.5 tablespoons soy sauce
- 4 tablespoons water
- dash of berry powder
- oil for frying
Preparation
Blend the chili sauce ingredients until well combined, taste test and add more salt if needed for a tangy flavor, add lime juice for extra flavor if desired, and refrigerate until ready to use.
In a heated pot with sesame oil, sauté garlic and ginger until fragrant, add rice and stir continuously, then add water and salt, bring to a boil, reduce heat to low and simmer for 18 minutes, turn off heat, cover and let rest for 15-20 minutes, fluff with a fork when ready.
While the rice is resting, prepare the tofu: drain firm tofu well, cut into 3 long logs, and shallow pan fry until golden brown with oil.
Prepare the Char Siu sauce by mixing 4 tablespoons hoisin sauce, 2 tablespoons garlic chili sauce, 1.5 tablespoons soy sauce, 4 tablespoons water, and dash of berry powder (optional) until well combined.
Pour the sauce into a pan, bring to a boil and simmer until it thickens slightly, slowly add the fried tofu, coat well with the sauce using a spoon until it becomes thicker and stickier, then turn off heat, cut tofu into 1/2 inch thick pieces and slather with remaining sauce when serving.
