Speedy Chickpea Pizza

Ingredients

  • 1/4 cup chickpea flour
  • 1/4 + 1/8 cup almond milk
  • 1 tbsp nooch
  • 1/2 tbsp flaxseed
  • 1/2 tsp apple cider vinegar
  • 1/8 tsp bicarbonate of soda
  • 1/8 tsp onion powder
  • ? 2tbsp tomato purée
  • ? pinch of dried oregano
  • ? almond cream cheese
  • ? a few mushrooms, sliced
  • ? 3 cherry tomatoes, halved
  • ? 2 slices of vegan ham, broken up

Preparation

  1. Preheat your oven to fan 180°C

  2. Whisk the ingredients to form a smooth batter, leave to sit for a few mins whist heating up a large frying pan with some water or oil

  3. Quickly pour all the batter in (use a spatula to get it all out but work fast) and spread to form a large crepe/pancake shape

  4. Cook on a medium heat until lots of bubbles form and flip it once it is golden brown

  5. Cook on the other side until nicely browned (you want it quite dark but not burnt)

  6. Flip again and cook on the original side until as equally brown

  7. Transfer to a lined baking dish with baking paper and top with pizza toppings of your

  8. Then place in the oven for 12 minutes

  9. Slice and enjoy hot
