Spinach Potato Soup with Bread Rolls

Ingredients

  • 900g potatoes (a firm type), peeled and chopped
  • 300-400g frozen spinach cubes
  • 4 garlic cloves
  • 2 shallot onion
  • 2 vegetable stock cubes
  • around 1,2l water
  • 500ml oatcream or other cooking cream
  • 1/2tbsp lemon juice
  • optional, olive oil for flavour
  • begin by peeling and dicing the potatoes.

Preparation

  1. Begin by peeling and dicing the potatoes

  2. Add the potatoes and spinach to a large pot along with the water. Add the vegetable cubes and allow to boil for 8-10 minutes. Add the garlic cloves (diced) as well as the shallot onions (diced) and cook the potatoes until soft

  3. Add the oatcream along with salt, pepper, lemon juice and some olive oil

  4. Mix with a handmixer - or allow to cool before mixing in a food processor until smooth

  5. You can then reheat it on the pot if you want or eat at the temperature it is
