Tofu Alfredo Pasta

Ingredients

  • 1 14 oz. block firm silken or soft tofu
  • 1/4 cup melted vegan butter
  • 1/2 cup vegetable broth
  • 3 tablespoons soy sauce or bragg’s liquid aminos
  • 1/3 cup nutritional yeast
  • 2 cloves garlic
  • 1 teaspoon dried basil
  • 2 teaspoons onion powder
  • 2 tablespoons lemon juice (or juice of 1 large lemon)

Preparation

  1. Blend all ingredients until smooth

  2. Pour over 16 oz

  3. Of cooked fettuccine pasta and serve with sautéed greens and your other favorite veggies for a one-bowl meal! ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  4. I’ve made this with firm tofu and it works well! simply add a little more broth or water to reach your desired consistency
