Vegan Apple Pie
Ingredients
- 420g spelt flour (about 3 heaped cups)⠀
- 230g cold vegan butter (about 1 cup)⠀
- 0.5 tsp salt⠀
- 120ml (1/2 cup) cold water⠀
Preparation
Preheat oven to 210C(410F)
For the filling: 5 apples, 70g (1/2 cup) coconut blossom sugar, 1 tsp lemon juice, 1 pack vanilla sugar (or 1 tsp extract), 1 tbsp ground cinnamon, 2 tbsp flour.
Add all ingredients for the dough in a separate bowl. Use either your hands or a kitchen aid to form the dough. ⠀
Cut the dough in half and roll out one half on a floured surface. Transfer it to a pie form. Add the filling. Roll out the other half of the dough and cover the apples with it.⠀
Cut off any excess dough. You can use it to cut out some decorating leaves with a cookie cutter.⠀
Bake at 210C for 20 min. Then turn the heat down to 160C and bake for another 40 min. Eventually cover with tin foil in the end so it doesn’t get dark.⠀
