Vegan Creamy Roasted Red Pepper Sauce

Ingredients

  • 2 red bell peppers OR jarred roasted bell peppers (about equivalent to 2 bell peppers)
  • 1/2 yellow onion, finely diced
  • 2 cloves of garlic, minced
  • 1/4 cup almond milk (or any dairy free milk)
  • About 1-2 tbsp ripe avocado
  • 2 tbsp extra virgin olive oil
  • 2 tbsp nutritional yeast
  • 2 tbsp jarred marinara sauce
  • Salt and pepper, to taste
  • Optional: dash of red pepper flakes

Preparation

  1. If using fresh red bell peppers, roast them until charred, then peel and remove seeds; if using jarred roasted peppers, drain them.

  2. In a pan, heat olive oil over medium heat and sauté the finely diced onion and minced garlic until softened.

  3. In a blender, combine the roasted peppers, sautéed onion and garlic mixture, almond milk, avocado, nutritional yeast, marinara sauce, salt, pepper, and optional red pepper flakes, then blend until smooth.

  4. Heat the sauce in a pan if desired, and adjust seasoning to taste.
