Ingredients

  • No-salt canned pinto beans
  • 1 can
  • Pasta (Whole-grain or GF)
  • 1 1/2 cups
  • Frozen bell peppers
  • 1 cup
  • Frozen corn
  • 1/2 cup
  • Salt-free chili powder
  • 2 tsps
  • Nutritional yeast
  • 1 tbsp + 1 tsp
  • Optional
  • Hot sauce
  • to taste

Preparation

  1. Drain and rinse the pinto beans

  2. Cook the pasta according to directions on package. One minute before pasta is done cooking, add the frozen peppers and frozen corn. Let water return to a boil

  3. When pasta is cooked, drain and return to the pot. Add the beans, chili powder, nutritional yeast, and optional hot sauce

  4. Toss to combine and warm all ingredients
