Coconut, Banana, Peanut Butter Cups
Ingredients
- 1 cup of peanut butter
- 1 tbs coconut sugar
- 2 heaped tbs virgin coconut oil (melted)
- A few drops of vanilla essence (I used vanilla powder & it worked too!)
- 1/3 tsp Himalayan salt
- 1/4 cup shredded coconut (FODMAP friendly serving)
Preparation
Combine all ingredients together well
Place a small dollop into the bottom of mini muffin cases, place a slice of banana on top then cover with another dollop of the mixture
Leave to set overnight in the freezer
