Coconut, Banana, Peanut Butter Cups


  • 1 cup of peanut butter
  • 1 tbs coconut sugar
  • 2 heaped tbs virgin coconut oil (melted)
  • A few drops of vanilla essence (I used vanilla powder & it worked too!)
  • 1/3 tsp Himalayan salt
  • 1/4 cup shredded coconut (FODMAP friendly serving)


  1. Combine all ingredients together well

  2. Place a small dollop into the bottom of mini muffin cases, place a slice of banana on top then cover with another dollop of the mixture

  3. Leave to set overnight in the freezer
