Creamy Smoked Paprika Pasta Sauce

Ingredients

  • 1 cup raw cashew nuts (soaked or simmered for 5 minutes, then drained)
  • 1 cup water
  • 2 tbsp nutritional yeast
  • 2 tbsp lemon juice
  • 1 tbsp dried basil
  • 1 tsp smoked paprika powder
  • 1 tsp salt
  • 1 tsp pepper

Preparation

  1. In a high-speed blender (900W+), blend the soaked cashew nuts, water, nutritional yeast, lemon juice, dried basil, smoked paprika powder, salt, and pepper until smooth.

  2. In a pan, add the sauce to sautéed tomatoes, onions, and garlic. Bring it to a simmer and let the sauce thicken. Add spinach and allow it to melt.

  3. Cook your preferred pasta separately according to the package instructions.

  4. Combine the cooked pasta with the sauce in the pan. If the mixture seems too dry, add plant milk to moisten it.

  5. Serve the creamy smoked paprika pasta sauce and enjoy!
