Farmer's Market Salad

Ingredients

  • 1/2 cup good quality extra virgin olive oil
  • - 1/4 cup balsamic vinegar
  • - 2-3 teaspoons Dijon mustard
  • - 2-3 teaspoons maple syrup or agave
  • - 1/2 teaspoon fine sea salt
  • - 1/4 teaspoon ground black pepper
  • - 1 clove minced garlic (optional)

Preparation

  1. Shake well in a sealed container. Taste and adjust seasonings to your liking

  2. Today, I added some buttery avocado ?on the salad too. You can toss in baked chickpeas to make it more filling (see my previous post for an easy recipe)
