Gnocchi
Ingredients
- 1) potato: 200gm
- 2) gluten free flour: 1/3rd cup
- 3) aquafaba: 1 tbsp
Preparation
Peel the potatoes, cut in cubes and boil till done
Let them cool
Smash the potatoes with a fork till there are no lumps
The best way to do this is to pass them through a ricer, but i don't have one!
Add aquafaba and flour to the smooth potato mash
Kneed on a well floured surface to form a round dough
Cut the dough into four pieces
Roll each piece into a sausage about 1/2 inch in diameter
Cut the sausage into 1 inch chunks
Roll each piece into a ball and press down with a fork
Bring a large pot of salted water to a boil and drop the gnocchi pieces into the water in small batches
When they float to the top they are ready
Fish them out using a slotted spoon and keep refrigerated till use
