Gnocchi

Ingredients

  • 1) potato: 200gm
  • 2) gluten free flour: 1/3rd cup
  • 3) aquafaba: 1 tbsp

Preparation

  1. Peel the potatoes, cut in cubes and boil till done

  2. Let them cool

  3. Smash the potatoes with a fork till there are no lumps

  4. The best way to do this is to pass them through a ricer, but i don't have one!

  5. Add aquafaba and flour to the smooth potato mash

  6. Kneed on a well floured surface to form a round dough

  7. Cut the dough into four pieces

  8. Roll each piece into a sausage about 1/2 inch in diameter

  9. Cut the sausage into 1 inch chunks

  10. Roll each piece into a ball and press down with a fork

  11. Bring a large pot of salted water to a boil and drop the gnocchi pieces into the water in small batches

  12. When they float to the top they are ready

  13. Fish them out using a slotted spoon and keep refrigerated till use
