Healthy Breakfast Muffins

Ingredients

  • 1.5 flax eggs
  • 3 tbs olive oil
  • 1 mashad large ripe banana
  • 2 tbs raw honey
  • 1/2 cup finely grated apple
  • 2 tbs coconut sugar
  • 1 tbs date syrup
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp vanilla powder
  • 1/2 cup homemade oat milk (unsweetened)
  • 1 cup grated carrots
  • 2/3 cup gluten free oats
  • 1/2 cup almond meal
  • 1 cup buckwheat flour
  • 2 tbs ground flaxseed
  • Some raw wallnuts for the topping

Preparation

  1. Preheat oven to 190 C (375 F)

  2. Mix together flax eggs, banana, olive oil and honey. Until smooth.

  3. Next add the apples, sugar, date syrup, baking soda, cinnamon and vanilla and whisk together.

  4. Then add oat milk and stir, carrots and stir.

  5. Next add almond meal, flax seeds and flour and stir to make a smooth mixture.

  6. Top with chopped walnuts and bake for about 30 mins.

  7. Mine were done in about 27 mins.
