Pancakes

Ingredients

  • 2 eggs
  • 1 x 250g smooth ricotta
  • 1 cup milk (i use almond but normal milk is fine)
  • 1 cup self raising flour
  • 1 scoop vpa protein powder vanilla (optional)
  • 2 tsp baking powder
  • pinch of salt
  • 1/2 cup frozen or fresh blueberries for mix
  • maple syrup
  • fresh blueberries & banana, frozen blueberries & blackberries

Preparation

  1. Whisk together the eggs, ricotta & milk until well combined and smooth

  2. Sift flour on top along with protein powder, baking powder and then mix until just combined

  3. Don't over beat the batter

  4. It will be thicker than normal, then gently fold in blueberries

  5. Heat non-stick pan over low-med heat and fry until golden brown, flip and cook remaining batter to make all pancakes

  6. Serve with extra blueberries, [some fresh, some frozen (microwaved)], blackberries and walnuts! i also added some chopped bananas between the pancakes for some additional natural sweetness ?

  7. Then pour a 'sensible' amount of maple syrup or honey over the top for some serious flavour! ?

  8. Then the best part ofcourse - smash em' - what are you waiting for?! slice and swallow! ?
