Ragi Cereal Pancakes

Ingredients

  • 1 cup Ragi hittu (flour)
  • 2 tablespoons arrowroot starch or cornflour
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1 ripe banana
  • 1 flax egg (1 tablespoon flax meal + 3 tablespoons water) or 1 egg
  • 2 tablespoons coconut oil
  • 2 tablespoons coconut milk
  • 1/2 teaspoon cinnamon
  • 2-3 tablespoons coconut sugar or jaggery

Preparation

  1. In a bowl, remove and replace 2 tablespoons of Ragi flour from the 1 cup of flour with arrowroot starch or cornflour.

  2. Blend all the ingredients (including the Ragi flour, arrowroot starch or cornflour, baking powder, salt, ripe banana, flax egg or egg, coconut oil, coconut milk, cinnamon, and coconut sugar or jaggery) in a blender or mixie jar until well combined. Add a splash of water if needed to adjust the consistency.

  3. Heat a pan or griddle over medium heat. Grease it lightly with oil or cooking spray.

  4. Pour the batter onto the pan to make pancakes of desired size.

  5. Cook the pancakes for a few minutes on each side until golden brown and cooked through.

  6. Serve the Ragi cereal pancakes with sliced bananas, freshly grated coconut, and a hemp butter date caramel sauce.
