Smashed Peas on Toast

Ingredients

  • 2 spring onions, plus one more to serve
  • 1 clove garlic, minced
  • 1 1/4 cups frozen peas
  • 1-2 tbsp coconut yoghurt (can sub for yoghurt of choice)
  • Few sprigs fresh mint, finely chopped (add to taste – I actually used a handful)
  • Juice 1/2 lime
  • Chilli flakes to taste
  • Salt and pepper to taste

Preparation

  1. Toast a slice of bread

  2. Sauté the minced garlic and chopped spring onions in a pan until fragrant

  3. Add the frozen peas and cook until tender

  4. Mash the pea mixture with a fork or masher

  5. Stir in the coconut yoghurt, chopped mint, lime juice, chilli flakes, salt, and pepper to taste

  6. Serve the smashed peas on the toasted bread, garnished with the additional spring onion
