Traditional Tabouli Inspired Kale Salad
Ingredients
- 2 cups cooked bulgur wheat (red or white)
- 1 can chickpeas, drained and rinsed
- 2 bunches of parsley, finely chopped
- 1 bunch of kale, stemmed and finely chopped
- 1 bunch of green onions, thinly sliced
- 1 handful of mint leaves, finely chopped
- 1 tomato, chopped
- 1 cucumber, chopped .
- 2 large lemons, juiced
- 2 tbsp olive oil
- 1/2 tsp cumin
- a pinch of salt & pepper
Preparation
Prepare bulgur as directed on package

When bulgur is cooled, combine salad ingredients together in a large bowl
Whisk together dressing ingredients and toss with salad
This is a great salad on its own for a well balanced meal?
