Vegan Cubano Picadillo

Ingredients

  • 1 tbs of olive oil
  • 1 cup of chopped white onion
  • 1 cup of chopped bell pepper
  • 3 cloves of minced garlic
  • 1/4 cup of chopped green chiles
  • 2 tsp of cumin
  • 3/4 tsp of oregano
  • 1/4 tsp of cinnamon
  • 1/2 tsp of pink himalayan salt
  • 1/4 tsp of black pepper
  • 1/2 cup of sliced green olives (we used @mediterraneanorganic)
  • 1 cup of diced tempeh
  • 1/2 cup of diced tomatoes
  • 1/2 cup of filtered water
  • 1/3 cup of tomato sauce
  • 1/3 cup of filteredwater
  • rice of choice(we used raw cauliflower rice)

Preparation

  1. In a pan on medium heat, add olive oil, onion, and bell pepper and cook for 5 minutes stirring occasionally

  2. Add garlic,green chiles and seasonings and stir well

  3. Add olives and tempeh, stir well, and let cook for a few minutes

  4. Add tomatoes and 1/2 cup of water and stir well

  5. In a separate bowl combine tomato sauce and 1/3 cup of water and stir until well combined

  6. Then add to pan and stir everything until mixed well

  7. Allow to simmer for a few minutes

  8. Remove from heat and serve over cauliflower rice

  9. Garnish with fresh cilantro and fresh squeezed lime juice
