Vegan Cubano Picadillo
Ingredients
- 1 tbs of olive oil
- 1 cup of chopped white onion
- 1 cup of chopped bell pepper
- 3 cloves of minced garlic
- 1/4 cup of chopped green chiles
- 2 tsp of cumin
- 3/4 tsp of oregano
- 1/4 tsp of cinnamon
- 1/2 tsp of pink himalayan salt
- 1/4 tsp of black pepper
- 1/2 cup of sliced green olives (we used @mediterraneanorganic)
- 1 cup of diced tempeh
- 1/2 cup of diced tomatoes
- 1/2 cup of filtered water
- 1/3 cup of tomato sauce
- 1/3 cup of filteredwater
- rice of choice(we used raw cauliflower rice)
Preparation
In a pan on medium heat, add olive oil, onion, and bell pepper and cook for 5 minutes stirring occasionally
Add garlic,green chiles and seasonings and stir well
Add olives and tempeh, stir well, and let cook for a few minutes
Add tomatoes and 1/2 cup of water and stir well
In a separate bowl combine tomato sauce and 1/3 cup of water and stir until well combined
Then add to pan and stir everything until mixed well
Allow to simmer for a few minutes
Remove from heat and serve over cauliflower rice
Garnish with fresh cilantro and fresh squeezed lime juice
