Banana Bread
Ingredients
- 1 flax egg (1.5tbsp flax meal + 3tbsp warm water)
- 1 cup spelt flour
- 1 cup all-purpose flour/wholemeal
- 1 tsp baking soda (bicarbonate de sodium)
- 1 tsp baking powder (levure chimique)
- 1 tbsp cinnamon
- a good pinch of salt
- 2 ripe to very ripe medium-large bananas + 1 extra
- 6 dates (soaked)
- 1/4 cup almond butter
- 1.5 cup soy milk
- 1 tbsp apple cider vinegar
Preparation
Make flaxegg by mixing flaxmeal with warm water (not cold, not boiling water - just warm) in a small bowl and set for 5 minutes - it will become thick like egg
In a large bowl, mix all dry ingredients (flour, powders, salt, cinnamon)
On a plate (easier) smash 2 bananas & dates together (i like keeping chucks of dates but if that’s not your thing then you could also use a blender!)
Mix bananas, almond butter, ’egg’ & mylk together in another bowl
Then transfer to large bowl & add vinegar
You may have to adjust liquid depending on your flour & size of bananas, so maybe start with 1 cup mylk and compare the texture to mine
Pour in loaf, slice extra banana in half and place on top (option: sprinkle coconut sugar&cinnamon)
Bake 50 minutes at 180°c
Check if cooked with a knife (comes out wet but clear)
Then cool in loaf 20 minutes and out of loaf another 10 minutes !
