Vegan Banana Bread with Chia Seeds
Ingredients
- 2 1/2 cups oats
- 3 tablespoons chia seeds
- 6 tablespoons water
- 3 ripe bananas
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon apple cider vinegar
- 1/3 cup nut butter
- 3/4 cup plant-based milk
- optional: 1/3 cup maple syrup or brown sugar
Preparation
Grind 2 1/2 cups of oats in a mixer to make flour.
Soak 3 tablespoons of chia seeds with 6 tablespoons of water for five minutes.
Mash 3 ripe bananas.
Add the oat flour, 1/4 teaspoon baking powder, 1/4 teaspoon baking soda, 1/2 teaspoon apple cider vinegar, 1/3 cup nut butter, 3/4 cup plant-based milk, and optionally 1/3 cup maple syrup or brown sugar, then mix everything together.
Bake at 250-350°C for about 50 minutes or until a toothpick inserted comes out clean.
