Vegan Banana Bread with Chia Seeds

Ingredients

  • 2 1/2 cups oats
  • 3 tablespoons chia seeds
  • 6 tablespoons water
  • 3 ripe bananas
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon apple cider vinegar
  • 1/3 cup nut butter
  • 3/4 cup plant-based milk
  • optional: 1/3 cup maple syrup or brown sugar

Preparation

  1. Grind 2 1/2 cups of oats in a mixer to make flour.

  2. Soak 3 tablespoons of chia seeds with 6 tablespoons of water for five minutes.

  3. Mash 3 ripe bananas.

  4. Add the oat flour, 1/4 teaspoon baking powder, 1/4 teaspoon baking soda, 1/2 teaspoon apple cider vinegar, 1/3 cup nut butter, 3/4 cup plant-based milk, and optionally 1/3 cup maple syrup or brown sugar, then mix everything together.

  5. Bake at 250-350°C for about 50 minutes or until a toothpick inserted comes out clean.
