Breakfast

Ingredients

  • red onion
  • tsp of chopped garlic
  • half a pack of roughly chopped mushrooms
  • chestnut
  • big handful of spinach
  • dried thyme
  • salt and pepper

Preparation

  1. Heat a splash of olive oil in a frying pan and add one small diced red onion ? once that’s starting to cook off, add a large tsp of chopped garlic ? (You can get jars of chopped garlic in vinegar and these save so much effort!). When the onion is really softening, add half a pack of roughly chopped mushrooms ? we love chestnut & they contain vitamin D as a bonus ? fry for a good few minutes until the mushrooms are cooked how you like them then throw on a big handful of spinach ? Stir through until wilted. Don’t forget to season while cooking - I added loads of dried thyme to this, plus plenty of salt and pepper

  2. Pile it all up on some bread - I went for a toasted @warburtonsuk #vegan labelled sesame bagel ? and tuck in
