Caramel Stuffed Baked Donut Holes

Ingredients

  • 2/3 cup oats (jumbo/rolled etc)
  • 1/2 tsp baking powder
  • just under 1/3 cup coconut yogurt or vegan greek yogurt
  • vegan caramel (thick, e.g., coconut or date caramel)
  • cinnamon sugar or granulated sweetener with cinnamon

Preparation

  1. The night before: scoop out small balls of caramel (between 1/2 tsp to 1 tsp), roll them in your hands, place on a sheet of baking paper (make 6 or more), and freeze overnight

  2. In the morning: blend the oats to form a flour, then mix with the baking powder and yogurt to form a dough

  3. Take a bit of the dough, roll and press down to form a circle, place the frozen caramel ball inside, seal the edges to form a ball, and repeat for the remaining dough and caramel

  4. Roll the donuts in the cinnamon sugar mix

  5. Bake the donut balls for 15 minutes at 180°C fan and serve hot
