Caramel Stuffed Baked Donut Holes

Ingredients

  • 2/3 cup oats (jumbo/rolled etc)
  • 1/2 tsp baking powder
  • just under 1/3 cup coconut yogurt (or vegan greek yogurt)
  • vegan caramel (i used a coconut caramel but date caramel should work too, it needs to be very thick so one made from butter & sugar wouldn’t work) - i used @myvegandulcedeleche
  • ✨ cinnamon sugar/sweetener (i used a granulated sweetener and some cinnamon)

Preparation

  1. THE NIGHT BEFORE: scoop out small balls of your caramel (between 1/2 tsp to 1 tsp), roll them in your hands and place on a sheet of baking paper (make 6 or more in total) and then freeze these overnight

  2. IN THE MORNING: blend your oats to form a flour, then mix this with the baking powder and yogurt to form a dough

  3. Take a bit of the dough, roll and press down to form a circle, place the frozen caramel ball inside and seal the edges of the dough to form a ball (repeat for the remaining dough and caramel)

  4. Roll the donuts into the cinnamon sugar mix

  5. Bake the donut balls for 15 mins at fan 180°C and serve hot
