Cashew Cheese

Ingredients

  • 2 cups raw cashews
  • 2 cloves garlic, minced
  • 1/2 tsp garlic powder
  • 1 medium lemon, zested
  • 1/4 cup lemon juice
  • 1/2-3/4 cup water, add half & see if you might need a touch more
  • 2 tbsp nutritional yeast
  • 1/2 tsp sea salt
  • 2 tbsp olive oil

Preparation

  1. Place cashews in a bowl, cover with cool water & store in fridge to soak for 4 hours - overnight

  2. Once soaked & drained, add all ingredients to food processor and blend until smooth

  3. Scrape into a jar & set overnight in the fridge (or st least 6 hours)

  4. Serve as a dip, spread on your favourite whole grain or paleo bread or dollop on the side of your yummy abundant salads
