Cashew Cheese
Ingredients
- 2 cups raw cashews
- 2 cloves garlic, minced
- 1/2 tsp garlic powder
- 1 medium lemon, zested
- 1/4 cup lemon juice
- 1/2-3/4 cup water, add half & see if you might need a touch more
- 2 tbsp nutritional yeast
- 1/2 tsp sea salt
- 2 tbsp olive oil
Preparation
Place cashews in a bowl, cover with cool water & store in fridge to soak for 4 hours - overnight
Once soaked & drained, add all ingredients to food processor and blend until smooth
Scrape into a jar & set overnight in the fridge (or st least 6 hours)
Serve as a dip, spread on your favourite whole grain or paleo bread or dollop on the side of your yummy abundant salads
