Creamy Vegan Pasta Bowl
Ingredients
- 2 small potatoes (1 cup, peeled and cubed)
- 1 small white onion (roughly chopped)
- 1 tbsp. lemon juice
- 2 tbsp. nutritional yeast
- 1 1/3 cup of oat milk
- 8oz pasta of your choice (or gluten free)
Preparation
Bring a small saucepan with water to a boil. Add the cubed potatoes and the chopped onion. Cook them for about 5-6 minutes or until the potato cubes are soft
Drain the water and add the veggies to a blender along with all the other ingredients. Blend until smooth and transfer the sauce back to the saucepan
Bring it to a boil for just a second and mix in any tomato sacue you like
