Creamy Vegan Pasta Bowl

Ingredients

  • 2 small potatoes (1 cup, peeled and cubed)
  • 1 small white onion (roughly chopped)
  • 1 tbsp. lemon juice
  • 2 tbsp. nutritional yeast
  • 1 1/3 cup of oat milk
  • 8oz pasta of your choice (or gluten free)

Preparation

  1. Bring a small saucepan with water to a boil. Add the cubed potatoes and the chopped onion. Cook them for about 5-6 minutes or until the potato cubes are soft

  2. Drain the water and add the veggies to a blender along with all the other ingredients. Blend until smooth and transfer the sauce back to the saucepan

  3. Bring it to a boil for just a second and mix in any tomato sacue you like
