Garam Masala Stew
Ingredients
- canned tomatoes (1/2 can)
- 1/2 cup water
- 1/2 can coconut milk
- 1/2 grated sweet potato
- 1 grated carrot (big)
- 2 tbsp garam masala
- 1 tsp paprika powder
- 1 tsp cumin powder
- 1/2 tsp chili powder
- some salt + pepper
- 1 tbsp soy sauce
- 1 tbsp ginger
- 1 clove garlic
- 1/2 onion
- additional: leek (topping), rice, quinoa, cooked bulgur, fried cauliflower, rice
Preparation
In a medium sized pot fry garlic, onion & ginger w some oil for a couple of minutes
Add spices + a splash of water and fry for another minute
Then add all other ingredients, bring to a boil and leave for 10-15 minutes on medium heat (stir every once in a while) or until the grated sweet p & carrot bites have turned tender
Soo good served with cooked bulgur, cauliflower rice + some leek
