Garam Masala Stew

Ingredients

  • canned tomatoes (1/2 can)
  • 1/2 cup water
  • 1/2 can coconut milk
  • 1/2 grated sweet potato
  • 1 grated carrot (big)
  • 2 tbsp garam masala
  • 1 tsp paprika powder
  • 1 tsp cumin powder
  • 1/2 tsp chili powder
  • some salt + pepper
  • 1 tbsp soy sauce
  • 1 tbsp ginger
  • 1 clove garlic
  • 1/2 onion
  • additional: leek (topping), rice, quinoa, cooked bulgur, fried cauliflower, rice

Preparation

  1. In a medium sized pot fry garlic, onion & ginger w some oil for a couple of minutes

  2. Add spices + a splash of water and fry for another minute

  3. Then add all other ingredients, bring to a boil and leave for 10-15 minutes on medium heat (stir every once in a while) or until the grated sweet p & carrot bites have turned tender

  4. Soo good served with cooked bulgur, cauliflower rice + some leek
