Healthy Energy Bars

Ingredients

  • 180 g medjool dates
  • 100g pumpkin seeds
  • 100g sunflower seeds
  • 150 whole almonds
  • 8 heaped tbsp cashew or peanut butter
  • 75g rolled oats
  • 1 tsp ground cinnamon
  • 1-2 tbsp maple syrup or honey (optional)

Preparation

  1. In a food processor- blend the pitted dates, peanut butter together to get a smooth paste

  2. Next stir in the rest of the ingredients. They should form a big sticky ball. If it’s not holding together, then add more nut butter. Press the mix into your mould and pop it in the fridge to set for 30 minutes. Cut into bars and enjoy
