Masoor Dal

Ingredients

  • 3 tbsp of oil
  • small handful of mustard
  • seeds
  • cumin
  • & fennel seeds
  • 1 small onion
  • 3-4 minced garlic cloves
  • turmeric
  • ginger
  • & salt
  • red lentils
  • 2 tbs olive oil
  • chopped tomatoes
  • spinach
  • and cilantro

Preparation

  1. Heat 3 tbsp of oil, add in small handful of mustard, seeds, cumin, & fennel seeds

  2. Once seeds pop, add 1 small onion, diced

  3. Stir until translucent, then 3-4 minced garlic cloves

  4. Add a big pinch each of turmeric, ginger, & salt

  5. Finally, add 2 cups of red lentils, plus broth & water (~double the liquid to lentils)

  6. Simmer until absorbed & cooked through, add more liquid if needed

  7. Stir in 2 tbs olive oil, chopped tomatoes, spinach, and cilantro
