Masoor Dal
Ingredients
- 3 tbsp of oil
- small handful of mustard
- seeds
- cumin
- & fennel seeds
- 1 small onion
- 3-4 minced garlic cloves
- turmeric
- ginger
- & salt
- red lentils
- 2 tbs olive oil
- chopped tomatoes
- spinach
- and cilantro
Preparation
Heat 3 tbsp of oil, add in small handful of mustard, seeds, cumin, & fennel seeds
Once seeds pop, add 1 small onion, diced
Stir until translucent, then 3-4 minced garlic cloves
Add a big pinch each of turmeric, ginger, & salt
Finally, add 2 cups of red lentils, plus broth & water (~double the liquid to lentils)
Simmer until absorbed & cooked through, add more liquid if needed
Stir in 2 tbs olive oil, chopped tomatoes, spinach, and cilantro
