Purple Sweet Potato Falafel Rainbow Salad + Raw Cauliflower Tabouleh & Beetroot Hummus

Ingredients

  • Purple Sweet Potato Falafel
  • - 1 cup purple sweet potato
  • - 1 can chickpeas - 1/2 cup parsley
  • - juice of 1 lemon
  • - 1.5 tsp cumin
  • - 1/2 tsp black pepper
  • - 1/4 tsp red pepper flakes
  • - 1 tbsp tahini
  • - 1/8 cup coconut flour - 1/2 small red onion
  • Bake at 400°F for 15 minutes then flip and bake for another 15 minutes. Cool for 10-15 minutes
  • Beetroot Hummus
  • - 1 can chickpeas - 1/2 lime juice
  • - 1 zucchini peeled - 1 tablespoon sesame seeds
  • - 1 roasted beet
  • - 1/2 tsp cumin
  • - 1/2 tsp Italian herbs - 1/2 tsp black pepper
  • - 2 tbsp water
  • - 1/2 tsp ACV
  • Blend or food process until smooth
