
Purple Sweet Potato Falafel Rainbow Salad + Raw Cauliflower Tabouleh & Beetroot Hummus

Ingredients
- Purple Sweet Potato Falafel
- - 1 cup purple sweet potato
- - 1 can chickpeas - 1/2 cup parsley
- - juice of 1 lemon
- - 1.5 tsp cumin
- - 1/2 tsp black pepper
- - 1/4 tsp red pepper flakes
- - 1 tbsp tahini
- - 1/8 cup coconut flour - 1/2 small red onion
- Bake at 400°F for 15 minutes then flip and bake for another 15 minutes. Cool for 10-15 minutes
- Beetroot Hummus
- - 1 can chickpeas - 1/2 lime juice
- - 1 zucchini peeled - 1 tablespoon sesame seeds
- - 1 roasted beet
- - 1/2 tsp cumin
- - 1/2 tsp Italian herbs - 1/2 tsp black pepper
- - 2 tbsp water
- - 1/2 tsp ACV
- Blend or food process until smooth
