Roasted Chorizo and Veg with Bulgur Wheat
Ingredients
- 150g carrots, halved lengthways
- 1 large red onion, cut into wedges
- 2 garlic cloves, crushed
- 1 tsp smoked paprika
- 2 tbsp olive oil
- 150g cooking chorizo, sliced in half
- 150g bulgur wheat
- 1 lemon, juiced
- handful of mint, leaves picked
- 1 large sweet potato
- cut into chunks
Preparation
Heat the oven to 200C/180C fan. Toss together the sweet potato, carrots, onion, garlic, paprika and olive oil in a roasting tin. Roast for 15 mins. Remove, stir, then add the chorizo and continue cooking for 15 mins more until the veg is tender and the chorizo is crisp. Cook the bulgur wheat following pack instructions
Toss the cooked bulgur through the veg and chorizo mixture with the lemon juice, then scatter over the mint leaves. Serve and enjoy
