​Spiced Fries with Roasted Garlic Hummus

Ingredients

  • 1-2 tbsp grape seed oil
  • 1-2 tbsp french fries spice mix
  • in a bowl mix together oil and spices.
  • 2 sweet potatoes
  • 2 yellow potatoes

Preparation

  1. Preheat oven to 400 F (200 C)

  2. Cut peeled potatoes into even strips. Cut them as evenly as possible. Choosing potatoes of similar shape and size helps

  3. In a bowl mix together oil and spices

  4. Add potatoes and use your hands to toss them in the spice mix until everything is evenly covered. Bake them for 50-60 mins on a lined baking sheet, giving them a stir once or twice in between

  5. For the hummus I blended up about 2 cups of chickpeas, 2 tbsp tahini, juice of 1 lemon, salt, cumin, paprika and 4 garlic cloves roasted with a little bit of oil until fragrant and some water
