Sugar Free Brownies

Ingredients

  • 2 large sweet potatoes, in cubes
  • - 8 medjool dates
  • - 1 small banana
  • - 2 scoops of vegan #plennyshake
  • - 1/2 cup oat flour
  • - 5 tbsp raw cacao powder
  • - 1/2 tsp vanilla powder
  • - 3/4 cup almond milk
  • - 2 tbsp coconut oil

Preparation

  1. Soak the medjool dates in hot water and set aside

  2. Preheat your oven to Cook the sweet potato cubes for about 7 minutes or until tender

  3. Then transfer those to a food processor along with the dates (drain the water), banana and almond milk

  4. In a separate bowl, mix the Plenny shake together with the flour, raw cacao powder and vanilla powder

  5. Pour the wet mixture into the dry mixture and stir well until combined

  6. Transfer everything to a lined baking tin and bake for about 45 minutes or until a toothpick comes out clean

  7. The brownies are best when completely cooled
