Vegan Buttermilk Pancakes

Ingredients

  • mix together 3/4 cup almond milk with 1/2 tsp apple cider vinegar and let curdle for 5 minutes. whisk together with 1/4 cup soy yogurt
  • 1 tsp vanilla and 1 tbs maple syrup. mix in 1 cup self-raising flour and 1/2 tsp baking powder until just combined (LUMPS are good). cook on a greased pan over medium low heat
  • flipping until bubbles form/edges turn opaque and set
