Vegan Chettinad Jackfruit Curry

Ingredients

Chettinad masala

  • 1 cup coconut
  • 1 teaspoon coriander seeds
  • 1 teaspoon cumin seeds
  • 2 dried red chilies
  • 3 cardamom pods
  • 3 cloves
  • 1 teaspoon peppercorns
  • 2 teaspoons poppy seeds soaked in 2 tablespoons water for 30 minutes
  • 10 cashew nuts soaked in water for 30 minutes
  • 1 tablespoon grated ginger
  • 1 inch cinnamon stick
  • 1/4 to 1/2 cup water

Curry

  • 1 onion
  • 2 tomatoes
  • 1 can drained and washed jackfruit
  • 1 cup Chettinad masala
  • 1 teaspoon turmeric
  • 1 teaspoon curry powder
  • 1/2 cup water
  • salt to taste
  • olive oil

Preparation

  1. Begin by making the masala. Roast the first 7 ingredients in a dash of olive oil until the masala browns. Add to a food processor with the remaining ingredients and blend into a paste.

  2. Cook onions in olive oil until they are brown. Add the masala, turmeric, curry powder, and tomatoes, and cook for 7-10 minutes until oil separates.

  3. Mix in the jackfruit and add water. Simmer for 5-7 minutes, then garnish with fresh coriander.
