Vegan Chettinad Jackfruit Curry
Ingredients
Chettinad masala
- 1 cup coconut
- 1 teaspoon coriander seeds
- 1 teaspoon cumin seeds
- 2 dried red chilies
- 3 cardamom pods
- 3 cloves
- 1 teaspoon peppercorns
- 2 teaspoons poppy seeds soaked in 2 tablespoons water for 30 minutes
- 10 cashew nuts soaked in water for 30 minutes
- 1 tablespoon grated ginger
- 1 inch cinnamon stick
- 1/4 to 1/2 cup water
Curry
- 1 onion
- 2 tomatoes
- 1 can drained and washed jackfruit
- 1 cup Chettinad masala
- 1 teaspoon turmeric
- 1 teaspoon curry powder
- 1/2 cup water
- salt to taste
- olive oil
Preparation
Begin by making the masala. Roast the first 7 ingredients in a dash of olive oil until the masala browns. Add to a food processor with the remaining ingredients and blend into a paste.
Cook onions in olive oil until they are brown. Add the masala, turmeric, curry powder, and tomatoes, and cook for 7-10 minutes until oil separates.
Mix in the jackfruit and add water. Simmer for 5-7 minutes, then garnish with fresh coriander.
