Vegan Cookie Skillet

Ingredients

  • 1/4 cup coconut oil, solid
  • 3/4 cup coconut sugar or brown sugar
  • 1/4 cup unsweetened apple sauce
  • 1 1/4 cup brown rice flour
  • 1/3 cup tapioca flour
  • 1/2 tsp baking powder
  • 1 tsp vanilla
  • 3/4 cup dark chocolate chips

Preparation

  1. Preheat oven to 375F. Grease a small cast iron skillet with some coconut oil, set aside

  2. Whisk together coconut oil with sugar until you have no more large lumps

  3. Add in the apple sauce, flax egg, and vanilla. Whisk until incorporated

  4. Add in your flours, and baking powder

  5. Stir until combined

  6. Stir in your chocolate chips, leaving a few to sprinkle on top. Transfer dough into your cast iron skillet, pressing down to ensure an even surface. Sprinkle with remaining chocolate chips on top and bake for 22-25 minutes

  7. Remove and let cool slightly before digging in
