Vegan Gluten Free Crunchy Onion Rings

Ingredients

  • For the Onions
  • * 2 large onions, cut in 1/2 inch slices
  • * 2 tablespoon oil
  • * Salt
  • * Pepper
  • For the Batter
  • * 70 grams/Half cup Corn flour
  • * 70 grams/ Half cup Rice flour
  • * Xanthan Gum - 1% of rice flour and corn flour combined. Approximately 1.4grams or a very small pinch (DO NOT EXCEED 1.5 grams)
  • * Club soda, as needed
  • Frying the Onion Rings
  • * Corn flour
  • * Salt
  • * Oil
  • * Chaat Masala

Preparation

  1. For the Onions

  2. Heat a sauté pan on medium. Add the oil

  3. Season both sides of the onion slices with salt and pepper.Place in the pan

  4. Lightly brown on both sides and chill in the refrigerator for 25-30 mins

  5. When cool, separate into rings

  6. Dab off excess oil by pressing against paper towel

  7. For the Batter

  8. Mix corn flour and rice flour in a bowl

  9. Whisk in club soda until the batter is the consistency of dosa/pancake batter

  10. Frying the Onion Rings

  11. Lightly coat the onion rings in corn flour. Dust off the excess

  12. Coat the onion rings in the batter

  13. Fry in medium hot oil until light brown and crisp

  14. Drain excess oil on a paper towel

  15. Season with salt and chaat masala

  16. Serve Hot
