Vegan Gluten Free Crunchy Onion Rings
Ingredients
- For the Onions
- * 2 large onions, cut in 1/2 inch slices
- * 2 tablespoon oil
- * Salt
- * Pepper
- For the Batter
- * 70 grams/Half cup Corn flour
- * 70 grams/ Half cup Rice flour
- * Xanthan Gum - 1% of rice flour and corn flour combined. Approximately 1.4grams or a very small pinch (DO NOT EXCEED 1.5 grams)
- * Club soda, as needed
- Frying the Onion Rings
- * Corn flour
- * Salt
- * Oil
- * Chaat Masala
Preparation
For the Onions
Heat a sauté pan on medium. Add the oil
Season both sides of the onion slices with salt and pepper.Place in the pan
Lightly brown on both sides and chill in the refrigerator for 25-30 mins
When cool, separate into rings
Dab off excess oil by pressing against paper towel
For the Batter
Mix corn flour and rice flour in a bowl
Whisk in club soda until the batter is the consistency of dosa/pancake batter
Frying the Onion Rings
Lightly coat the onion rings in corn flour. Dust off the excess
Coat the onion rings in the batter
Fry in medium hot oil until light brown and crisp
Drain excess oil on a paper towel
Season with salt and chaat masala
Serve Hot
