Vegan Jackfruit Lentil Sheperdsless Pie

Ingredients

  • 1/2 onion, diced
  • 1 carrot, diced
  • 1 clove garlic, minced
  • 1 celery stalk, diced
  • s&p
  • ground coriander & cumin
  • 100g mushrooms
  • 1/2 tin jackfruit, shredded w/ hands
  • 1/2 pack pre-cooked puy lentils
  • 60ml stock (veg or vegan beef)
  • 1 tbsp sweet miso
  • 1/2 tsp paprika
  • 25ml vegan red wine

Preparation

  1. Saute onion, carrot, garlic, celery w/ coriander, cumin, s&p & cook 15 mins. Add jackfruit, lentils, stock, miso, paprika, wine & cook 15 mins w/ lid on

  2. Potato, peeled & chopped, boil the potato until soft, mash with some mylk (& vegan butter)

  3. Transfer the stew to a dish, pipe on the mash & serve with parsley, roasted carrots & peas
