Vegan Jackfruit Lentil Sheperdsless Pie
Ingredients
- 1/2 onion, diced
- 1 carrot, diced
- 1 clove garlic, minced
- 1 celery stalk, diced
- s&p
- ground coriander & cumin
- 100g mushrooms
- 1/2 tin jackfruit, shredded w/ hands
- 1/2 pack pre-cooked puy lentils
- 60ml stock (veg or vegan beef)
- 1 tbsp sweet miso
- 1/2 tsp paprika
- 25ml vegan red wine
Preparation
Saute onion, carrot, garlic, celery w/ coriander, cumin, s&p & cook 15 mins. Add jackfruit, lentils, stock, miso, paprika, wine & cook 15 mins w/ lid on
Potato, peeled & chopped, boil the potato until soft, mash with some mylk (& vegan butter)
Transfer the stew to a dish, pipe on the mash & serve with parsley, roasted carrots & peas
