Berry Lemon ? Crumble Loaf
Ingredients
- 2 cups al-purpose flour
- 1/2 cup sugar
- 2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 salt
- 1/2 cup vegan strawberry ? yogurt
- 1/2 cup vegan blueberry yoghurt
- 1/4 cup ground flaxseed
- 1/2 cup vegetable oil
- zest of 1 lemon ?
- 1 cup raspberries, fresh or frozen

- 1/4 cup all-purpose flour
- 1/4 cup sugar
- 2 tablespoons vegan butter
Preparation
Preheat oven to 400°f
Line a 9 x 5- inch rectangular loaf p pan with high temperature resistant parchment paper
In a large mixing bowl, combine 2 cups of flour, 1/2 cup of sugar, baking powder, baking soda and salt
In a separate mixing bowl, combine yogurts with flaxseed then mix in oil and lemon ? zest
Add wet ingredients to dry in the large mixing bowl and stir until combined; fold in raspberries
Spread batter evenly in loaf pan
In a small bowl, mix together 1/4 cup of flour and 1/4 cup sugar, then cut in butter with knife or fork until crumbly to make the topping
Sprinkle topping evenly on top of loaf
Bake 50-60 minuets or until top is golden, center is thoroughly cooked, and a cake tester comes out clean when inserted in the middle of the loaf
Let loaf set for about 5 minuets before removing from pan
Slice and serve “as” or spread with a pat of vegan butter
