Easy Stuffed Butternut
Ingredients
- 1 small butternut
- olive oil
- salt and pepper
- 100g of any tofu
- 40g some cultured vegan cheese you
- parsley
- a few hazelnuts or nuts
Preparation
Preheat your oven to 180C/350F
Cut your butternut in half, remove the seeds and make some cuts in the flesh
Brush with olive oil, sprinkle salt and put in the oven for 10 minutes
Meanwhile, crumble your tofu, add the cheeze, chopped nuts and stir
You can add 1-2 tbsp of aquafaba to bind the stuffing but it's not obligatory
Stuff the butternut after the 10 minutes of baking and place back in the oven to ake for 15-20 more minutes
Voilà, it's ready!
