Farmer recipe

Ingredients

  • 1 whole 2kg barra (adjust recipe & cooking time to size)
  • 1 bunch of coriander with the roots cut off and kept aside
  • 1 bunch of mint
  • 2 shallots diced fine
  • 3 spring onion chopped fine
  • 1 inch knob of garlic cut into match sticks
  • 1 large red chili diced fine
  • 1 cup of peanut oil.
  • 1 jar of good quality oyster sauce
  • Salt and pepper

Preparation

  1. Preheat the oven to 180 degrees

  2. Line a large oven tray with foil and then place a sheet of baking paper over the foil

  3. Place the fish on the tray and add the coriander roots and shallots to the inside the fish along with a generous seasoning of salt and pepper

  4. Generously rub the fish in oyster sauce, flip and coat the other side

  5. Wrap the fish in the baking paper and foil by folding the sides and corners in, so its tight enough not to lose the flavour but lose enough to allow the fish to steam

  6. Bake for about 40 minutes (check at 40, you may need more time)

  7. Once the fish in done, remove from the oven and wrapping and serve it onto a platter

  8. Place the oil in small pot and heat until it smokes, then add all the remaining aromatics, stir through, remove from heat and pour over the fish

  9. Garnish with the picked coriander and mint and serve
