Fluffy Gluten-Free Waffle

Ingredients

  • 2 cups gluten free flour bob's red mill 1-to-1
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon optional
  • 1 cup plant based yogurt
  • 1 cup oat milk
  • 4 tsp aquafaba liquid from canned chickpeas
  • 1 tsp vanilla extract

Preparation

  1. Into a large mixing bowl add in all the dry ingredients

  2. Whisk to combine

  3. Then add in the yogurt, milk and vanilla

  4. Use a spoon to mix until well combined

  5. Then in a medium size mixing bowl add in the aquafaba

  6. Beat on medium speed until stiff peaks begin to form

  7. This should take roughly 3-5 minutes

  8. Then fold in the whipped aquafaba into the waffle batter mix

  9. Then place roughly 1/2 cup or 3/4 cups (depending on the size of waffles you want) of the batter onto your hot waffle pan and cook on medium heat until ready

  10. If you do not own a waffle maker then you can make these into pancakes on a pan or griddle
