Hariyali Chicken Tikka
Ingredients
- 600g chicken thigh meat cut into large bite sized pieces
- 2 small red onions thickly sliced
- 2 tsp lemon juice
- 1 tsp sea salt
- 1 cup fresh coriander leaves - tightly packed
- 1/3 cup fresh mint leaves - tightly packed
- 2 tsp chopped ginger
- 2 tsp chopped garlic
- 1-2 green chillies rough chopped
- 1 tbsp veg oil
- 1/2 tsp ground cumin
- 1/2 tsp garam masala
- 1/4 tsp ground cardamom
- pinch ground cinnamon
- pinch freshly ground black pepper
- 3 tbsp natural yoghurt
- 1 tbsp cold water
Preparation
Put the chicken pieces, lemon juice and salt into a mixing bowl and stir through. Place in the fridge while you sort out the rest of the marinade
Put the remaining ingredients in a blender and blitz until smooth. Stir the mixture through the chicken and place back in the fridge for 6 or more hours
If you’re using wooden skewers soak them for an hour in water first. Thread the chicken and red onion pieces onto the skewers. Pack tightly. Grill or bbq for 5 mins each side until they are cooked through and have a bit of a char
