Lemon Ginger Date Ballss

Ingredients

  • 1 cup raw cashews
  • 1 cup ground almonds
  • 1/2 cup pitted dates
  • zest of 1 lemon
  • juice of 1/2 large lemon
  • 1/2 tsp vanilla paste or extract
  • 1 tbsp hemp seeds
  • 1 tsp ginger

Preparation

  1. Add the cashews & ground almonds to a food processor and pulse until the cashews have been ground down

  2. Add the remaining ingredients and pulse until combined

  3. Do not over-process - there should still be some texture, not completely smooth

  4. Yield 10-12 balls and place on baking paper on a baking tray

  5. Leave to chill in the fridge for 1 hour and enjoy!
