Lemon Ginger Date Ballss
Ingredients
- 1 cup raw cashews
- 1 cup ground almonds
- 1/2 cup pitted dates
- zest of 1 lemon
- juice of 1/2 large lemon
- 1/2 tsp vanilla paste or extract
- 1 tbsp hemp seeds
- 1 tsp ginger
Preparation
Add the cashews & ground almonds to a food processor and pulse until the cashews have been ground down
Add the remaining ingredients and pulse until combined
Do not over-process - there should still be some texture, not completely smooth
Yield 10-12 balls and place on baking paper on a baking tray
Leave to chill in the fridge for 1 hour and enjoy!
