Mediterranean Fish Grill

Ingredients

  • 500g plaice, black bream and mackerel fillets or any fish of your choosing (cooking times may differ)
  • 60ml olive oil
  • 1 tsp garlic - finely grated
  • 1 tsp lemon rind - finely grated
  • 1 tsp dried oregano
  • pinch salt and pepper
  • 3 tbsp lemon juice
  • handful flat leaf parsley leaves - finely chopped

Preparation

  1. Combine the olive oil, lemon rind, oregano and salt and pepper in a small container

  2. Set aside

  3. Remove fish from the fridge and pat off any excess water with some paper kitchen towel

  4. Put the fish on a plate and coat all sides with 2 tbsp of the oil mixture

  5. Cover and put in the fridge to marinate for 60mins

  6. While the fish is marinating finish off the dressing by adding the lemon juice and chopped parsley to the remaining marinade

  7. To grill the fish cook skin side down on the bbq or skin side up on a baking tray covered with baking paper

  8. If cooking under a standard kitchen grill on high for 4-5 mins

  9. Serve with grilled mediterranean vegetables, buttery new potatoes or anything else you fancy!
