Mexican Eggs

Ingredients

  • 2 cups of cooked chopped tomatoes
  • 1/2 cup of chopped fresh pineapple
  • Large handful of chopped fresh coriander
  • 1 chopped chilli
  • Juice from 1/2 lime
  • 1 chopped red onion Salt and pepper
  • I combined the following in a bowl
  • 1 box (230g) of organic black beans
  • 1 chopped red onion
  • Juice from 1/2 lime
  • 1 Tbs of smoked paprika
  • 1 tsp spicy smoked paprika
  • 3 cloves of garlic
  • Salt and pepper
  • I chopped up some black kale and then I rubbed my skillet with some olive oil and layered it with the following
  • 2 corn tortillas
  • The bean mixture
  • The salsa
  • Chopped kale
  • 6 eggs

Preparation

  1. At the end I sprinkled it with some more smoked paprika and cooked first on the stove for 5 minutes and then in the preheated oven for about 25 minutes
